Garlic

For 2023 we will be selling garlic as scapes, green garlic, and cured garlic.

We are working with Night Owl Farms of North Branch to tell CSA shares to complement their Veggie Shares.

Garlic Scapes

They are the flower bud of the garlic plant. We cut them in order to direct the energy of the plant to the bulb. This will result in larger cloves. They keep fresh in the fridge for over a month or can be frozen. They are delicious raw, pickled, grilled or sauteed, as a pizza topping, or blended into a delicious pesto. Personally our favorite way to eat them is as a pesto on a margarita pizza!

Uncured Green Garlic

These bulbs have not undergone the curing process so they have more moisture and will not last as long in storage. Fresh-pulled garlic can be used just-like cured garlic but has a more intense, zesty flavor. This delicacy is only available for about 1-2 weeks in July during harvest.

Cured Garlic

Garlic is cured on Hallow Acres by hanging in our barn. This process allows the energy from the leaves of the plant to move into the bulbs as the outer garlic wrappers dry. Curing allows for long term storage of garlic. Cured garlic will store for 8 to 10 months when kept in a cool, dry location. During the curing process the flavor mellows slightly as the moisture evaporates. All garlic you find in the grocery store is cured, however often with chemicals. At Hallow Acres never use chemicals for this process or to grow our garlic. All of our garlic can be eaten or planted as seed to grow your own plants.
